Chinese Tea

Making Gongfu Tea

Step 1

Put the entire tea set on the plate in advance. Instil hot water into teapot and teacups to warm them up. Dispense the hot water from the teapot into the plate, and then put the tea leaves into the teapot.

Step 2

Pour boiled water from a high spot into the teapot until it overflows. Then, throw away the water. (This process is called tea washing and used when making Chinese black tea.) Instil more hot water until it overflows, put the lid on as if you want to wipe out the foams on the surface of the tea.

Step 3

Pour hot water on every area of the already-lidded teapot and leave it steaming for 1 to 2 minutes. (If it’s biscuit ware, then wait until the surface of the ware dries up.)

Step 4

Pour the tea from the teapot into the chakai. Pour it down to the last drop.

Step 5

Pour the tea from the chakai into every single cup. With the use of chakai, you can make every cup of tea have the same temperature.

Using Tea-Smelling Cups

Step 1

Use a teapot or chakai to instil tea into tea-smelling cups.

Step 2

Remove the tea from tea-smelling cups into normal teacups.

Step 3

When enjoying the wonderful scent from the tea-smelling cup, drink the tea from normal teacups.

Using Chinese Tea Pot

Step 1

Prepare a teapot in advance. Instil hot water into the teacups to warm them up.

Step 2

Throw away the water and put tealeaves into the teapot.

Step 3

Instil hot water again and leave it steaming for 1~2 minutes. In the case of making Chinese black tea, throw away the water used for the 1st time to wash the tea wares.

Step 4

Pour the tea into each cup with even amount.

Using Lidded Bowls

Step 1

Instil boiling water into the cup to warm it up.

Step 2

After the warming-up, throw away the water and instil more hot water. Put the tea bag gently inside the cup, around the brim area.

Step 3

Put a saucer on the top of the cup like a lid and make it steam for 10 minutes.

Step 4

After steaming the cup, remove the lid and stir the content with the teabag. Finally, remove teabag gently from the cup.

Making a Glass of Tea

Step 1

Prepare a warmed up glass in advance. Then, instil hot water inside gently.

Step 2

Put in tea leaves from the top of the glass.

Step 3

Use a saucer as a lid and leave it steaming for a while.

Step 4

The tealeaves will start drifting up and down; when it has already precipitated, then you are all set to drink it.
