Preparing Chirashi Sushi

Ingredients (for 5-6 people)

  • Short or medium grain rice 3
  • Vinegar mix (Vinegar 4Tbsp, Sugar 3 Tbsp, Salt 1 tsp)
  • Carrot (chopped) 0.5 oz.
  • Gobo, burdock small piece (half a piece)
  • Lotus root 1 oz.
  • Raw shiitake mushroom 2 pieces
  • Chikuwa, a fish paste 1
  • (A) Soup stock 120 ml / Sugar 2 Tbsp. / Soy sauce 1 Tbsp. / Mirin (or Sake) 1 Tbsp. / Salt 1 tsp.
  • (B) Large egg 2 / Mirin 1 tsp. / Salt a pinch

Step One

Wash the rice well, add water into the Inner Cooking Pan up to scale Level 3.

Step Two

Place the Inner Cooking Pan in the Main Body, close the Outer Lid and plug in. And switch the rice cooker on.

Step Three

While the rice is cooking, prepare the ingredients. Cut carrots into fine pieces, shred Gobo, cut bamboo shoots in small strips, slice lotus roots into fine pieces, cut raw shiitake mushrooms in thin strips, and cut the chikuwa lengthwise then cut into small pieces. Boil these ingredients in the soup stock from (A) until the soup is gone.

Step Four

Mix the ingredients from (B) and fry into a thin crepe, and slice into small thin strips.

Step Five

Prepare sushi rice.

Step Six

Mix the ingredients from Step 4 with the “Sushi Rice” above.

Step Seven

Loosen the cooked rice from the pot by prying the rice away from the sides of the pan with the nonstick rice spatula. Dump all the rice at once into a large, wide, shallow dish. (Avoid using metal since the vinegar may react with the metal and produce an unpleasant taste). Run the edge of the spatula across the rice in a cross-hatching motion to break up the rice. Pour the vinegar mixture evenly over the hot rice and with the spatula begin mixing the vinegar into the rice with a gentle, folding motion. The vinegar seasoning must be mixed into hot rice for proper absorption. As you are folding in the vinegar mixture, fan the rice briskly with a hand or electric fan. (An assistant would be useful here. If you have to do it yourself alternate fanning with folding). Continue fanning and mixing until the rice has cooled to body temperature and appears glossy.

Note: Some advanced models of Zojirushi rice cookers have a special “Sushi Rice” setting that will automatically adjust the cooking time and temperature for sushi rice.
